Reaction to the ‘Ontario Chardonnay: Seriously Cool’ tasting at Canada House in London has been very positive. Jancis Robinson, Oz Clarke, Stephen Spurrier and Stephen Brook all had complimentary things to say about the 40 wines poured. 22 wineries participated. This could be an historic tasting in changing UK perceptions about Ontario wine.

Well, it’s Almost Time….

And when it’s all over, and just beginning too, I’ll be going on CTV New at Noon in Kitchener to reveal how it wend down in London. And I’ll be doing a little cooking with Ontario chard and pairing it with some fine Ontario cheeses.

For vegetarian dishes whites generally go very well, and chardonnay—in particular cool climate chardonnay—goes great with various mild to medium cheeses and cheese based dishes. It’s great as an aperitif before the meal with cheese, crackers and great crusty bread, with eggs and egg-based dishes, and in a spritzer. Chard also pairs well with pasta dishes that have a strong herb note, such as pesto, pizza, and mushrooms.

The North American Dream. Our ancestors settled here 200 years ago because Canada is the top of the world, the place to reinvent yourself. And cool Niagara is the place to reinvent Chardonnay. An Old World wine region in the New World: Niagara Chardonnay is a modern classic.
